Pulled ‘Pork’

 6 King Oyster Mushrooms, shredded
 1 cherry vanilla, cola, or root beer soda (organic please)
 3 espresso powder
 2 Namu Shoyu or tamari
 ½ liquid smoke
 1 bottle Trader Joe’s Organic Sriracha and Roasted Garlic BBS Sauce (or similar)

Preheat your oven to 420 degrees Fahrenheit with a large cookie sheet in the oven.

In a large bowl, mix the soda, espresso powder, Namu Shoyu, and liquid smoke together.

Add the mushrooms, and toss to coat well.

Carefully remove the cookie sheet from the oven, quickly arrange the mushrooms in a thin layer, and return the sheet pan to the oven.

Roast for 25-27 minutes, tossing every 7-8 minutes.

Remove from oven and allow to cool.

Reduce oven to 200 degrees Fahrenheit.

Generously toss the mushrooms with the BBQ sauce.

Place mushrooms in a Dutch oven or casserole with lid. Cover with the lid and place in the oven.

Bake, low and slow, for two hours, stirring every half hour.

Best served hot, but can also be served warm or at room temperature.

Top with your favorite vegan coleslaw, lettuce and tomatoes, etc.

Try to stay humble when all your friends and loved ones are drooling and raving about your Pulled ‘Pork’.
